I was thinking something like this:
Type 5 early: Forward sliding canopy, OP-1 tube sight, M-25 engine, 2x ShKAS, (optional weapons: 2x PV-1 guns, 2x50kg bombs, 2x100kg bombs)

Type 5 late or type 6: Fixed open canopy, PAK-1 sight, M-25A engine, 2x ShKAS, (optional weapons: 2x50kg bombs, 2x100kg bombs, 6x rockets)

Own ski version for both. First with skis without extra covers and second with ski covers as seen in captured IR-101. Does this sound correct & realistic?

You can. But it is not very good due to flexability reasons - mission designer may still want wheeled i-16 on winter map.
